  • Harveys Red Velvet Cupcakes

    Harveys Red Velvet Cupcakes Great for a Valentine's Sweet Treat! Straight from Miss Iris' cookbook.

    Let's get started.

  • Step 1: Gather Ingredients

    Here's what you'll need:
    1 (18.25 oz.) box butter recipe yellow cake mix
    2 tablespoons cocoa
    1 stick butter ( no substitute), softened
    1/2 cup milk
    1 (1 oz.) bottle red food coloring
    3 eggs


    (See icing ingredients in Step 3, or in the printed shopping list.)

  • Step 2

    With electric mixer, blend dry cake mix, cocoa, softened butter, milk, coloring and eggs until moistened. Beat at medium speed 4 minutes.



    Put cupcake wrappers in muffin tin. Fill wrappers half way with batter. Bake in a 350 degree oven. 20-25 minutes. Let cool before icing.

  • Step 3

    Frosting:
    1 (16 oz.) box confectioners' sugar
    1 stick butter (no substitute), softened
    1 (8 oz.) package cream cheese, softened
    1 teaspoon vanilla extract
    1/2-1 cup pecans, finely chopped






    Beat the frosting ingredients in a mixer just until smooth and even, saving the pecans to sprinkle on top of cupcakes last. Cover and keep refrigerated.
