2 tablespoons olive oil
1 medium onion, chopped
4 cloves garlic, chopped
1 medium green pepper, chopped
2 teaspoons dried leaf oregano
1 (16 ounce) can diced tomatoes, undrained
1 lemon, juiced
1 pound chicken, cooked and shredded
4 cups chicken stock
2 (16 ounce) cans BUSH'S® Garbanzo Beans, drained
1/4 cup crumbled feta cheese

Heat oil in a 4-quart saucepan over medium heat. Add onion, garlic, green pepper and oregano. Cook 3-4 minutes until vegetables are soft.

Serve topped with cheese and parsley. Serves 8.
