Bacon, Basil & Tomato Salad
A quick and fresh summer salad you can make in the morning and let marinate until picnic time!

Step 1 - Gather Ingredients
1/2 pound Smithfield Bacon, cut into 1" pieces and cooked crisp
4 large vine ripe summer tomatoes, cut into eighths
1 cup fresh basil leaves, roughly chopped
3 garlic cloves, minced
2 tablespoons balsamic vinegar
3 tablespoons olive oil
Salt and pepper to taste
Step 2 - The Setup
In a large glass bowl toss together tomatoes, basil and garlic.
Step 3 - Bring it Together
Pour vinegar and olive oil over and season with salt and pepper. Cover with plastic wrap and allow to marinate at room temperature for 4-6 hours.
Step 4 - Final
Toss in the crisp bacon just before serving. Suggestion: serve with a crispy, crusty bread. Pour any leftover over your favorite pasta for dinner.
